Started reviewing restaurants in 1900, they launched they first guidebook to encourage road tripping in France. In 1962 they started sending out anonymous restaurant reviewers to try restaurants. Today, they rely on a full-time staff of anonymous restaurant reviewers. After they visit, they write a memorandum of their experience at the restaurant, and then all the reviewers come together to discuss and decide whether a restaurant will be awarded with the star.
